Egg Muffins!

Who doesn’t need Quick, Easy and Yummy Breakfast ideas?!
Check out these Egg Muffins that are great for On-the-Go breakfast or a midday snack!!

-Green Bell Pepper (1)
-Scallion (2 stalks)
-1/4lb Low Sodium Ham, Chopped
-1 dozen eggs
-Shredded Cheese

1.  In a large mixing bowl, whip 12 eggs
2.  Spray muffin tin
3.  Pour eggs into muffin tin, 1/2 way full
4.  Add chopped ham, peppers and scallions to mixture.  Top with cheese.
5.  Cook at 350 degrees for 20-25 minutes.  Lightly brown on top.
6.  Add Salsa on top

*Serve immediately, makes 12 muffins

*Feel free to add an vegetables you like!  Store in air-tight container in fridge.  Feel free to freeze some.  Thaw in fridge when ready to eat and pop them in the microwave for 15-20 seconds to warm.
