Lemon Zest Blueberry Muffins

Even I love to indulge!  I found this recipe, saw how easy it was and SOLD!  Whipped up 2 batches in no time!  Plus, I knew I could grab these and eat them on my way to work (4:45am)!!  Or have in the freezer, on hand, when I just needed a treat!!

I found this recipe on Pinterest from Krusteaz!  Most of the ingredients I already had in the house!!

Produce:
 1 cup Blueberries, fresh
2 tsp Lemon, zest
Refrigerated:
1 Egg
Baking and Spices:
3/4 tsp Baking Powder
1/4 tsp Baking Soda
1 1/2 cups Krusteaz GF all purpose flour
1/4 tsp Salt (I didn’t use this)
1/2 cup Sugar (I used Splenda or Stevia)
Dairy:
5 tbsp Butter (Margarine)
3/4 cup Greek Yogurt, plain

1. Preheat the oven to 375 degrees.  Line muffin pan with paper liners.
2.  In medium bowl, combine butter, sugar and egg.  Add Krusteaz Flour, baking powder, soda, salt (optional), yogurt and lemon zest; stir until well blended.  Gently fold in berries.  Batter will be thick.  Fill muffin cups 2/3 full.
3.  Bake 20-25 minutes or until light brown!
