Sweet Potato Meatloaf?! …and more!

Always start your week off right – Never miss a Monday @ the gym and eating on point!

Sunday night works best for us to food prep – get our clothes ready for the work week – & plan our workout schedule!  I also fill in my calendar with the other million errands that need to get accomplished, however, I prioritize!  Taking time aside to work on me is not a bad thing!  In fact, it makes everything run smoother!

1. Sweet Potato Meatloaf
2. Workout
3.  Weekend projects (repurposing furniture)

A friend of mine found this Sweet Potato Meatloaf recipe and I decided to give it a try!
First of all, it was SO easy to make.  I had all of the ingredients in my home already, the prep took no time at all and it was cooking while I was making a few other snacks for the week.

Ingredients:
1.5lbs ground turkey
1 large sweet potato
1 onion, finely chopped
2 cloves garlic, minced (optional)
1 tbsp honey
1 egg
1/2 cup flaxseed meal (I used oatmeal)
1 tbsp salt
2 heaping tbsp Italian Seasoning


Prep:
1.  Steam the sweet potato to make it soft enough to mash.
2. Preheat oven to 350 degrees
3. Mash sweet potato in large bowl, add the rest of the ingredients and mix well using your hands!
4. Place mixture in a greased meatloaf pan
5. Place in oven for 50-55 minutes, cover with tinfoil if top is burning.
6.  You can also make into MEATBALLS – shape them, stick in muffin tin and bake 25 minutes.

Workout: Test Day!
*Mondays are great days to check on your progress!

1. Pull-ups (3 max sets)
2. Walk 0.50 miles, Jog 1 mile, Jog 2 miles (do the one you did last week and compare)
3. Max push-ups (2 sets)
4. 30 seconds of full sit-ups  (2x) *These are just for fun* 🙂
5. Plank (3 max sets)
6. Row 1,000 meters! (timed)
**Perform in order and don’t move to the next exercise until you have completed ALL sets of the exercise above!

*Yes, we are doing a few exercises at max reps in one day!  Obviously you will do better with the pull-ups than the push-ups since they are first, however, you may also find that you perform more push-ups than expected even when tired!  That is showing progress too!  We Rowed last week at the end of an arm workout, so this will match pretty well too.

*Keep challenging yourself and remember that DAILY & CONSISTENT efforts lead to the bigger picture*

Weekend Project (aka Stress Relief)!
70 degrees, sunny and the weekend.  You don’t have to look far to find me.  I am definitely outside and most likely in the garage making ‘something out of nothing!’

I found this drawer piece for $8 at a consignment shop – all it needed was some sanding and to be painted! The hardware alone was worth it!!  I just used some leftover paint in the garage!  Works great in my office to house the printer and paper!

Someone gave me this small table.  It has a few details missing and needed to be cleaned up!  I sanded it down and because I loved the green color it already was, I knew that if I added a white wash stain, it would make the ‘distressed’ look be more consistent and as though it was suppose to be like that!  Not sure where this is going yet – but oh well, I’ll find a spot!! hehe

4d13e0c7-a259-42d2-9bbc-23b0952f6bb4_400Apply with a dry bristle brush – wait 2 to 3 minutes, use a dry rag to wipe off excess stain.  Scrub a little more to get the desired amount of stain.  Go with the grain of the wood! You can really see the difference in person!
